Prosciutto, Speck, and all the Hams :: what’s the difference

Ham has always been there for us, from second grade lunches to Easter dinners at grandma’s house. But saying every ham is the same is like saying all beef is steak. It’s just not true. While all hams are made from pigs’ legs, the way they’re cured, seasoned, and smoked—or not—makes a huge difference in the final product.
