All About Kale

 kale-and-shallots

This vegetable hardly needs an introduction. A member of the brassica family, kale is a hardy leafy green that is ready for harvest in late summer. There are a few popular varieties of kale, including the flat-leafed and dark green lacinato or dinosaur kale; curly kale (identifiable by its energetically furled greens and thick, woody stems); and red Russian kale, which has large, flat leaves with lacy tips. Kale can withstand colder temperatures, and is often harvested well into late fall or early winter. Rochelle Bilow of Bon Appétit
