This vegetable hardly needs an introduction. A member of the brassica family, kale is a hardy leafy green that is ready for harvest in late summer. There are a few popular varieties of kale, including the flat-leafed and dark green lacinato or dinosaur kale; curly kale (identifiable by its energetically furled greens and thick, woody stems); and red Russian kale, which has large, flat leaves with lacy tips.
