
Love strawberries? Take out your blender and try this spin on a summer soup.
Preparation time: 10 minutes; Refrigerate time: 1 hour; Serves 6
INGREDIENTS
- 4 cups Strawberries
- 1 cup cranberry juice
- 1 cup water
- 1 cup plain yogurt
- 1/2 cup granulated sugar
- 1 tbsp lime juice
- 6 sprigs mint leaves
PREPARATION
- In blender, puree together strawberries, cranberry juice, water, yogurt, sugar and lime juice.
- Strain into bowl. Cover and refrigerate until chilled, about one hour.
- Garnish each serving with mint sprig.
