strawberry yogurt soup

Love strawberries? Take out your blender and try this spin on a summer soup.

Preparation time: 10 minutes; Refrigerate time: 1 hour; Serves 6

INGREDIENTS

  • 4 cups Strawberries
  • 1 cup cranberry juice
  • 1 cup water
  • 1 cup plain yogurt
  • 1/2 cup granulated sugar
  • 1 tbsp  lime juice
  • 6 sprigs mint leaves

PREPARATION

  1. In blender, puree together strawberries, cranberry juice, water, yogurt, sugar and lime juice.
  2. Strain into bowl. Cover and refrigerate until chilled, about one hour.
  3. Garnish each serving with mint sprig.
