Spiced Tomato Chutney

Makes 3/4 cup, Total Time: 15 minutes

INGREDIENTS

  • 1  pint  grape tomatoes, halved
  • 2  tablespoons  cider vinegar
  • 1  tablespoon  brown sugar
  • pinch of allspice
  • pinch of cinnamon
  • kosher salt and black pepper

PREPARATION

In a small saucepan, combine the tomatoes, vinegar, sugar, allspice, cinnamon, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Simmer, stirring occasionally, until the mixture thickens, 8 to 10 minutes. Serve warm or at room temperature.

Chimichurri Sauce

Makes 1/4 cup, Total Time: 5 minutes

INGREDIENTS

  • 1/2  cup  fresh flat-leaf parsley, chopped
  • 2  tablespoons  extra-virgin olive oil
  • 1  tablespoon  chopped fresh oregano or 1 teaspoon dried oregano
  • 2  teaspoons  red wine vinegar
  • 1/8  teaspoon  crushed red pepper
  • kosher salt

PREPARATION

In a small bowl, combine the parsley, oil, oregano, vinegar, red pepper, and 1/4 teaspoon salt.

Cajun Grilled Onions

Serves 4,  Total Time: 15 minutes

INGREDIENTS

  • 1  large onion, sliced into 1/2-inch-thick rounds
  • 1  tablespoon  olive oil
  • 2  teaspoons  Cajun or blackening spice mix

PREPARATION

Heat grill to medium-high. Brush both sides of the onion rounds with the olive oil and sprinkle with the Cajun mix. Grill until blackened and tender, 5 to 6 minutes per side.

Pineapple-Jalapeño Salsa

Makes 1 cup, Total Time: 10 minutes

INGREDIENTS

  • 1  cup  chopped fresh or canned pineapple (about 4 ounces)
  • 1/2  jalapeño, seeded and finely chopped
  • 1  teaspoon  fresh lime juice
  • kosher salt

PREPARATION

In a medium bowl, combine the pineapple, jalapeño, lime juice, and 1/4 teaspoon salt.

Quick Pickled Cucumbers

Makes 1 cup, Total Time: 20 minutes

INGREDIENTS

  • 1/4  cup  rice vinegar
  • 1  tablespoon  sugar
  • kosher salt
  • 1  Kirby cucumber, very thinly sliced
  • 1/4  sweet or white onion, thinly sliced
PREPARATION

In a medium bowl, combine the vinegar, sugar, and 1/4 teaspoon salt, stirring until the sugar and salt are dissolved. Add the cucumber and onion and toss to combine. Let sit, tossing occasionally, at least 15 minutes and up to 6 hours.
