brining a turkey :: add bourbon

INGREDIENTS

For any size turkey up to 18 lbs.

2 gallons water
2 cups kosher salt
1 cup brown sugar
1 cup white sugar
1 yellow onion – quartered
2 lemons, juice and lemon parts
2 oranges, juice and orange parts
1/2 cup chopped thyme
1/2 cup ground black pepper
1/4 cup honey

PREPARATION

In a large stockpot, bring all ingredients to a boil, making sure the salt and sugar are dissolved well. Chill the brine, and add the following:

3 cups or 24 oz of Jack Daniels or any Bourbon

Starting early the day before you want to eat, place your washed and dried turkey head-side down into a bucket and pour in the brine until the turkey is completely submerged.  Brine for 20 hours. Turn the turkey over halfway through (at the 10 hour mark). Make sure the turkey and brine are kept ice-cold during the brining process (in a cooler, or in the fridge [preferred])

Remove the turkey from the brine, rinse it WELL, and pat it dry. Seasin well with your favorite rub, use butter and fresh herbs, stuff the bird (optional, not recommended), roast or fry, and enjoy!
